Carbonic anhydrase VI is an enzyme present in taste buds and the olfactory epithelium. Individuals with carbonic anhydrase VI deficiency have reduced quantities of this enzyme in their saliva and nasal mucus, leading to an impaired or total loss of taste and smell.
