In this randomized crossover trial, drinking juice made from Belgian endive (a leafy vegetable) for 7 days improved aerobic exercise performance.

The study
The participants were 32 untrained college students.
The participants were assigned to drink Belgian endive juice (made from 100 grams of the vegetable) mixed with 6 ounces of milk or 6 ounces of milk without endive juice (the control) every day for 7 days.
Aerobic exercise performance was tested by having the participants run on a treadmill at increasing speed and incline until they were too exhausted to continue. The test was performed 90 minutes after the participants drank their final beverage.
Belgian endive increased (improved) time to exhaustion during the test by 8.3% in men and 12.2% in women.
