In this 12-week randomized controlled trial in 46 participants with nonalcoholic fatty liver disease, replacing grains usually consumed at lunch with quinoa improved various cardiometabolic risk factors.

The study
All of the participants were instructed to consume a hypocaloric diet with the same macronutrient distribution. In the intervention group, the participants consumed an average of 50 grams of carbohydrates from quinoa at lunch.
Compared to the control group, there were reductions (improvements) in liver fat, weight (−3.1 vs. −0.5 kg, or −6.8 vs. −1.1 lb), waist circumference, HOMA-IR, triglycerides (−17.2 vs. +3.1 mg/dL), and LDL-C (−13.8 vs. +2.2 mg/dL) in the quinoa group, but changes in liver enzymes and liver fibrosis did not differ between the groups.
